Remember when no one heard of Sriracha hot sauce? It felt cool to know about it first, at least for me.

And it was a hot sauce that tasted better than just hot.
Did you ever wonder why it tasted so good?
Here’s the answer: It’s twenty percent sugar!

Out of 100 grams, 20 grams are sugar.
Sure, you only have a few grams at a time, so a serving doesn’t have a lot of calories, but that’s a high percent of sugar for when I want something spicy.
Hmm… it looks like it has no calories. That must be an error from the site I got the nutrition information from. The label on the bottle shows it has calories and confirms the twenty percent sugar content:


I hate to be cynical, but there is no truth in advertising. So here’s a suggestion. Roast a red pepper using olive oil infused with as much fresh garlic and Tabasco sauce as suits your senses. Tabasco Sauce has NO sugar and no calories. And the kick, is your kick!

Last summer’s farm share and experiment avoiding packaging showed me something I like even more: cooking with jalepeno and habenero peppers! No sauce, bottles, etc. The peppers taste great without other ingredients.
Once I started with fresh, whole ingredients, substitutions seem watered down and less satisfying.
